then I weighed the whole rig. The trailer had no water in it. It did have full propane and batteries and everything. The total weight was 10280#. If I fill the water tank I'll have about an extra 300#. Does that mean I have about 1000# to spare for a generator and camping gear? Will I be ok with this setup?

Depends. The truck weight of 5470 lbs with the trailer attached and 2.x people in it sounds really light. Doesn't make sense. Did you weigh just the truck without the trailer attached? It should weigh at least 4700 lbs, probably more, empty. Add 2.x people and the hitch weight of the trailer and I would expect it to be a little higher.
You are correct in that you have about 1000 lbs left on the GCWR. The more important number is the GVWR of the truck, and you seem to have a lot of room there as well. Just need to reconcile that low truck weight with the truck and trailer attached.
