Just a question, why are you towing it? Are you moving out to SLC, too? If not, just drive her Altima and fly back.

I have made this trip a few times. Takes about 32 hours of driving. However, do NOT take I-70. You will probably not make it over the rockies. I'd even be hesitant to do this with my V6 Tacoma, even going through the southern route. There are still lots of hills and such to climb up AND down. I'd actually be more concerned about your braking. Going down a steep grade with a 3000lb cargo is not fun. Does the dolly have brakes? I sure hope so. Also, does your Tacoma have airbags? Beefed up rear springs? If not, I'd imagine you'd be hitting your bump stops quite frequently and maybe even doing permanent damage.
