My list for 30k goes like this: drain and fill transmission, differential, coolant, and engine (if due). Change plugs, PCV, air filter and cabin air filter (if present). Either NGK or Nippondenso copper plugs are excellent.
Best thing to do is go to a Toyota dealership, ask for a maintenance schedule which is a brochure, which basically documents every 15K, 30K, 45K, 60K, etc. etc. on what needs to be done. That's what I did. Ask for it and tell them you will come in at a later point. If you cannot do it all, then have a trustworthy mechanic do it for you.

Does anyone have a recomendation for a maintenance manual/book for the Tundra? I checked on amazon and they didn't really have anything for the 2004.

i guess you don't have the owner's manual/maintenance books? the manual gives you all the specs on what grease/fluids to use. the maintenance book gives you the maintenance schedule for each mileage interval.
if you don't have 'em, i'd recommend gettin' 'em.
download, dealer, photocopy a friend's, whatever. if you have warranty left, you'll need to be able to show you did the scheduled maintenance correctly and if you wan't your truck to last, you'll need to do it anyway, so either way, since you're asking, you seem motivated and should definitely get the instruction books so you'll know what to do, how to do it and when.
ha! i couldn't resist.... ended up getting a set for my brother in law for his jeep, too. i have the tundra mats safely stored away for... hmmmm... not sure what i'm storing them for? resale? not planning... someday when the truck is an antique? not likely... i guess i just hate it when the factory floor mats are ruined and it's hard to find a set. ;-)
200 bux or so for the 30,000 mile maintenance. you can do it yourself for a lot less.
my local dealer has a sign posting the 60,000 mile service to cost 520 dollars. when pressed, he said that includes a timing belt change that isn't actually due until 90,000. i did find their price of 200 for the timing belt change to be quite reasonable. i kind of doubt that is the price for the 4.7 v8 considering all the labor involved. if it is, i'll definitely be having them do it ;-)
