I guess it depends on what deal you got.
I have an 07 with the v-6 in it, and i'm fairly pleased with the power & mpg. The best i have gotten is 20 with a light foot. Usually see around 17-18 with it.
IMO, power is pretty descent with the 6cyl. I opted to not get the v-8 because of the AWD. The v-6 does not have it, which i prefer for mpg & longer tire life. Although, there's some folks on this site that 'claim' they're getting the same mpg as the v-6.
Another reason i chose the v-6 is the fact that it has a timing chain and not a belt like the 4.7 does.
Other than what's listed above, the v-6 has everything the v-8 does with slightly less torque.
I've got an '08 V6 Sport w/leather and love it. Traded an '06 Tundra with the 4.7L and was disappointed with the mpg.
I have no idea what perceptible daily-driving performance difference the V8 will offer over the V6. I only occasionally tow a 10' utility trailer (it's my truck fill-in) and the V6 - when I choose to afford it - will scoot. It cruises comfortably and quietly at 78mph on the highway.
I have purposefully slowed down due to $4 gas and get ~18mpg around town and, if moderately careful, get 21 on the highway. I am not "hypermiling" however.
I chart every gallon of gas I put in the vehicle and now have 19,500 miles on my '08 odo. ouch

My wife drives a 2007 SR5 4Runner 2wd v6 and she is consistently getting 23.5 MPG from the computer. Everytime I reset it she gets that MPG, and I am getting the same thing calculating the 4Runner MPG by hand.
It probably helps that her commute is 35 miles each way on the highway, but she also does her fair share of city driving.
Overall, I am very pleased with the v6 SR5 2wd. If you dont need 4wd and a ton of towing power then get what we have. Besides, I have my Tundra for 4WD and the V8!

I also have a Tundra 4WD, but am considering downsizing to a Tacoma or 4Runner. Must still have 4WD since this vehicle is intended to go to Latin America where off the road can be truly off road! Especially as it pertains to mud, plus I'll be driving on the beach occasionally. Anyone here with a 4Runner who actually goes off road? Is so I'd sure like to hear what your experience has been.

Hey, I've got a friend in Mazatlan. Is that where you're from? Looked beautiful from the pictures.
Anyway, both the Tacoma and 4Runner will be great off-roaders. The 4Runner will have a slight edge due to the shorter wheel base, and the rear coils vs. leafs. The advantage with the Tacoma is that with the Off-Road package, you get a rear e-locker, which will come in handy. 4Runner does not have this, but you can always get one put in (~$1000).
Either way, both will be better than the Tundra off-road due to the smaller size and the aftermarket support.
And to the OP, the V6 definitely gets the job done. I am very impressed by the power fromt he 4.0L. There is better torque from the V8, obviously, but V6 is plenty powerful. The only reason I'd get the V8 is if I were towing heavy loads on a regular basis.
