You'll be adding a lot of weight for nothing, not to mention stainless steel especially 304 stainless which is what an airtank will likely be, will be EXPENSIVE!!!!
I had my powdercoated tanks on for a LONG time and I never had rust problems. I never saw the VIAIR powdercoating come off either and mine were each right behind each tire and running 35" mud tires, plenty of rocks were thrown at them.
If you do find them, post up, but I haven't seen them.
