for 2005 V6 gas octane required it says 91

Is that a change from 04 V6?

no car accept for stock turbocharged or over 300 hp requires 91 octane if im not mistaken

It is my understanding that the 2004 / 2005 V6 will run on lower octane - knock sensor will adjust timing - but you will loose performance and get fewer MPG. Higher compression ratio is the reason for 91 requirement but many other factors can be involved - temperature, altitude, driving style.

No the 05 Highlander is basically a carryover. 91 was recommended for the 2004 V6.

From the '04 owner's manual (pg 283)
OCTANE RATING
2AZ–FE engine: Select Octane Rating 87 (Research Octane Number 91) or higher. 3MZ–FE engine: Select Octane Rating 87 (Research Octane Number 91) or higher. For improved vehicle performance, the use of premium unleaded gasoline with an Octane Rating of 91 (Research Octane Number 96) or higher is recommended

Growlers right. Any engine with a compression ratio of 10:0:1 or high requires a higher octane rating of more than 87.
