No, you don't want to remove that center nut (that is securing the half-shaft to the steering knuckle). The original rotors are a very tight fit on the hubs. Assuming of course that you have removed the calipers and mounting brackets and hung the calipers safely (no strain on the hoses), then you can proceed to beat the rotors off. You can squirt some solvent of your choice at the junction of the rotor and hub if it makes you feel better, but it probably won't have any significant effect. Turn the rotor and smack it, preferably with a three-pound hand sledge. (You're replacing it anyway.) It will eventually give up and come off.
When you install the new rotors, clean up the hub with a wire brush and use a bit of anti-seize on the contact area between hub and rotor.
