I ordered some wheeler (pro-comp) 16x8 alloys. They have 4" Back spacing. here is the link

Black and Polished Alloy Toyota Truck Wheels from Wheeler's Off-Road (http://www.wheelersoffroad.com/tundrablackalloys.htm)

the tires I had on the stock 16x7 wheels were 265/75/16 and they fit fine. I guess they are slightly taller than stock.

What is the best size I can run? I don't want any rubbing and I do not offroad, just a little mud here and there.

Because of the above, I would urge you to stay with a LT265/75R16 tire. If you go to a 285 (a common recommendation here), you are getting too close to rubbing either the UCA and/or the frame at full lock.

The 265 size looks great on our trucks. Note that the increase will throw your speedo off by about 2-3%.
