Well I have the same setup on the front of my 2000 AC 2wd, Highest setting/ 5th slot. I used 1" blocks in the back for mine and it has the same stance as yours. Maybe my leaf springs are sagging wose than I thought. Whats your payload capacity?
Re: How about a Bilstein 5100 Adjustable shock update
Installed Saturday 4/21. It took longer than I expected. I had Pep Boys compress the springs and change out the shocks ($40). While they had the shocks, I did the TC Diff Drop and front diff boot mod. I set the 5100s to next to the highest setting and think the truck is close to level without being nose high. I think the height increase was approx 2".
I only have 2 problems remaining. First, should I replace the outer clamp on the outer boots? Second, I had to reverse the bolt for the bottom of the shock, will this eat the outer boot under normal road conditions (pavement 90% dirt 10%, no rock crawling)? I couldn't get the front drive axle out of the way to slip the bolt in the same way it was.
ALso used longer bolts and rubber shock bushings for the back of the skid plate to keep it off the front diff.
Loving the look and ride so far. Alignment this afternoon should only improve the ride.

I'm in the same boat as you are jclark01; I'm either looking into the 3" Toytec or these Bilstein 5100s. Anyone know the answer? Additionally, after installing these 5100s, would you be able to put in a simple 3" body lift like from Performance Accessories? Or will it be not possible?
Re: How about a Bilstein 5100 Adjustable shock update
I had mine installed this weekend, top notch on the front, also put 5100's on the back, got all 4 shocks on ebay for $315 including shipping. Truck looks great now, also put on HELO 971's and Nitto Dune Grappler 285/65/18 on my 06DC SR5. Really like the ride as well, a bit stiffer than factory but not too stiff. Will post some pic's as soon as I get it cleaned up.
Re: How about a Bilstein 5100 Adjustable shock update
I have mine installed on the top notch, too, and I'm finding it too tall in the front (despite 1" Deaver AALs in the back) and a bit to unforgiving (stiff) in the front.
I'm going to drop the front one notch next week and see how it goes....

Let us know how the drop goes. I'm getting closer to ready to doing my truck and hope to take advantage of everyone else's experiences!

FWIW, I had mine installed last Friday. I have them set in the middle groove (#3 out of 5). The truck sits perfectly level now. I have an 04 Tundra Doublecab, non-trd with the factory shocks in the back.

Any pics? What size tires/wheels are you running Mike? Is you DC 4wd or 2?
