Im pretty much clueless with this tire size thing.

Im getting a Bilstein 5100 setup on the truck. I have the rims down (ProComp Rock Crawlers 97 Series) but I have no idea what size rim I should get or what tires would work best.

The 5100 suspension can lift the truck a bit. I figured 1.5 in the back, 2.5 in the front, which is what Im going for. With that, what rim size and tire size should I need?

16s will give you the most options, but 17 were stock
but there is a great debate on weather or not 33" (285/75/16 or 285/70/17) fit on the truck.

I have 16s as stock rims, (06 AC TRD V8). I want 16s, just wasnt sure how big of a tire I can get. I guess 285s are good...not to big not to small.

285/75/16 is just the right size
