Yup, did so three days ago in my wife's '01 Sequoia, and a year ago in my '00 Tundra.
The Optima battery comes with spacer that fits under the bottom, which you'll need. When you receive it, it's the black cover that covers the top of the battery for shipping.
With the spacer underneath, it's still not quite tall enough; the hold down strap can be clamped down on one end, but not the other. So, you'll need
another spacer underneath the battery, or a small spacer underneath each end of the hold down strap.
I used 1/8 inch neophrene, two pieces each cut about 3/4 x 4 inches, under the ends of the hold down strap. Possibly you could find something appropriate at O'Reillys or Auto Zone.
Now, keep in mind that all this assumes the '07 is done the same way as the '99 - '06 models. I haven't seen it so I don't know, but it should be obvious that it's easy to get right. And, so far, it's been a very good battery in my truck. Both originals leaked, and these don't.
I have the Yellow Top version in my Tahoe because I use my Tahoe for work and I have to leave lights on for an extended period of time. With the Wal Mart battery, Ive been left stranded numerous times but with the Optima, NEVER !! That was the best $185, ive spent. Ill get a Yellow Top for the Tundra as well. In time. Im spending LOTS of money to make it mine.

I paid $169, plus tax, for an Optima 34R Red Top at Batteries Plus. That's the same price as at O'Reillys. The 34R is not a stock item at either place (but the standard polarity 34 is) so they ordered it, which meant mine was quite fresh from the factory.
I have one.... actually DJ is mostly right.... There are a couple of top spacers as well.... maybe he didn't receive?
1st Optima Batteries is even less money with the top spacers included...
I had a 34R red top Optima installed the day after I took delivery of my 2007 Tundra from Batteries Plus for around $165.00. All you need is the height adaptor it comes with and its a perfect fit. No other modification is needed.

Mine had only the large spacer that doubles as the top cover during shipping, along with three plastic clamps for use with a bottom-clamp application. There was a very thin clear plastic cover also, but it isn't thick enough to act as a spacer in my vehicles.
